I figured I’d give my readers a break from all my self-introspection and life musings and instead talk about food.
Cooking hasn’t been a high priority since I got back from my break at home, though I did run to the grocery store that very day to get fixings for crock pot pulled chicken recipe. I’ll confess I picked the recipe primarily because it only required me to pick up chicken and hamburger buns… Plus throwing it in the crock pot means it wouldn’t take much concentration or energy.
Today seemed like the perfect day to make it. I put it all together before digging my car out of the parking lot (this time with a shovel!) and when I came in 40 minutes later, I could already smell the BBQ. Two hours later I got to shred the chicken and indulge.
The one downside is that it was really liquidy, so the bun got soaked rather quickly. And I feel a little guilty with the BBQ sauce (I used Famous Daves Rich and Sassy, though only half a bottle, since it’s my to-go sauce). My dad and I read (and by that I mean I skimmed) a health book during the Thanksgiving break that basically said BBQ sauce is like maple syrup for meat. Regardless, it’s delicious.
Not sure if I’d make it again, in part because I’m not a huge BBQ chicken fan, but it was great after a snowy day. Plus it satisfied my BBQ craving. I usually ask my parents to take me to Famous Daves when I’m in town but we weren’t able to get around to it. Although it’s probably better I didn’t have the temptation of cord bread…
