Let me tell you — car browsing/shopping/buying has got to be one of THE most stressful experiences. I finally got serious about it last weekend and it made for a headache-inducing week. While I love research, numbers and the whole cost-benefit analysis thing, it was too much.
Then naturally came test driving. That was a whole other level of stress (especially if you’re like me and decide to try 12 among three dealerships….but this is also a girl who toured about that many colleges so I suppose it’s to be expected). Plus, as some can imagine, my personality does not mesh well with pushy car salesman. Makes for a long experience.
But thankfully all’s well that ends well and I fell in love with a car — one that wasn’t even on my radar or my beautiful Excel spreadsheet. But isn’t that how it always goes?
After 7.5 hours at dealerships, I had next to no mental functionality to whip something up for a group potluck. Lindsay was really excited about a cucumber pineapple salad and I couldn’t let her down. I’ll admit I had my reservations, but the flavor combination was actually quite fabulous.
And it wasn’t until I linked the recipe that I realized the cucumbers technically should have been cubed instead of sliced. Oh well. Other than that I followed the recipe exactly — including the red onions!
I also made a BBQ chicken chopped salad. In the shuffle of everything I didn’t even get a chance to snap a photo of it once it was all together. But that’s okay — I’d definitely make it again. As strange as it sounds, BBQ sauce on the salad was rather good. It was a nice change-up to my normal vinaigrette mixtures.
While this is the part where I’d normally try find a clever or witty way to pull this all together, my mind and body are still reeling from all the change (added two new workout classes and three days later my thighs are still killing me…). Time to regroup before another busy but hopefully great week.
