Making the most of it

Despite my bitterness about the winter snow storm, I was able to make the most of my day. Digging my car out with a dustpan replaced kickboxing (note to self: invest in a shovel). I finished a great book, touched based with the fam, and for the first time in awhile, I almost feel genuinely ready to take on the week (though I may have different thoughts when my alarm goes off tomorrow morning…).

While I didn’t want to cook given how clean I got my kitchen, going out to grab something wasn’t quite an option. Thankfully  the smothered chicken wasn’t as messy as I thought and hit the spot (though in my book you can’t really go wrong with mushrooms, spinach and cheese)

I actually think this would be really great mixed with pasta or rice. Normally I love sauces, but the cream was a bit much for the chicken — and that’s after using fat-free cream cheese and olive oil instead of butter for the sautéed mushrooms. Adding pasta would balance it out a bit, though it’s great on its own. I think I’d also add in artichokes since I tend to associates spinach with that anyway.

It was quite a contrast with my strawberry avocado salad but I just couldn’t help myself. And a week from now it’s supposed to be in the 60s. Come on, spring!
