It seems ironic that I found my summer salad of choice hours before yet another snowstorm hit… I love irony, but that just seems mean (though we all winter’s had it out for me these past few weeks).
I’d been meaning to try the strawberry avocado salad for a few weeks but it’s hard to figure out what to pair it with meal-wise. Last night I threw caution to the wind (not really) and decided to make it regardless. And it was a huge success.
The dressing as a bit more time-consuming to put together than most of my other dressings, in part because I had to blend the fruit. I cut the recipe for the dressing in half and actually used one cup of fresh strawberries and then a cup of frozen mixed berries to add a bit more flavor (I’m a sucker for raspberries and blueberries). I also threw in basil since that’s what other strawberry vinaigrette recipes called for and I thought it would pop even more. It looked a bit like a fruit smoothie, but let me tell you, it was fabulous.
Although I absolutely love avocado, I was a little nervous about having it be paired with strawberries. My worries were unwarranted. It all came together really well, not only in taste, but also presentation!
I’ve definitely got my salad of choice for the summer. Now if only Mother Nature would let me start wearing sandals and finally experience some spring weather…
