I may not be much of a baker (too much precise measuring for my liking) but I do love baked manicotti.
I’d been planning to make this for about three weeks now but put it off primarily because of the prep time. Plus the ingredients last a bit longer than others (in other words, it doesn’t require chicken like the other new recipes I tried in recent weeks did). But finally I couldn’t put it off any longer.
I should confess I’ve made this before. I loved it then, and I love it now. It’s not to the point where I can go entirely without the recipe (not that those mean much to me in most cases…) but I bet I’ll get there. The one thing I didn’t have was fresh basil, so I opted for basil herbs and Italian seasonings instead. I ended up with extra spinach stuffing, so I just spread it over the manicotti. (It’s primarily not as pretty because I stop being careful with the stuffing by probably the fifth shell.)
Just 35 minutes later and I had a some cheesy spinach goodness. I’ll admit the final product doesn’t look entirely stellar, but let me assure you that this photo does not do it justice.
In the future I may have to try freezing half of it, both to prevent having too many leftovers (particularly since in the next eight days I’m out of town for five, though it will be nice to come home and not have to worry about making anything) and also to reduce the prep time the next time I’m craving it.
It’s about time I took a break from new recipes and went back to one I love. Otherwise I miss half the point of trying new recipes in the first place…
