Leave it to me to make Super Bowl snacks healthy. Or at least as healthy as I could.
I’ll admit I’m not much of a football girl. From about 8th grade on I’ve been a hockey girl, so I don’t really get into the Super Bowl. What I can get behind, though, is good food and socializing.
As with most gathers, I went back and forth about what I wanted to bring. After much debate (internally, of course) one thing I definitely wanted to try was the skinny buffalo chicken dip. The only thing I didn’t include in the recipe was the white wine vinegar, but otherwise I followed the recipe almost exactly (what’s become of me?!). It may not look it particularly great, but let me assure you, it was.
In addition to just loving the dip itself, it was also nice to pair it with celery so I felt a little less guilty indulging. But this is definitely a side dish I’d make again — for a party, or just for myself! It hits the spot if you’re ever craving buffalo wings.
Figuring there might be a lot of chips and dips, I also wanted to make a potato nachos recipe. I wasn’t as over the moon about this, though it’s a great alternative to processed foods you’d get from the freezer. It might actually be better to try these as potato skins or boats of some sort, and I’d also want a bit more flavor. The ranch seasoning does help, but otherwise it’s pretty standard.
I can’t say everything I ate was healthy, but it’s the thought that counts, right? Plus it’s nothing a pre-game kickboxing class and an early morning workout the next day can’t balance out (although in all actuality,t that’s a really bad trap to fall into…). Thank goodness there’s minimal leftovers and they were skinny dishes!
