I have to confess that I’ve been terrible lately. For about a week straight (in part because of work, though), I’ve eaten out every. single. day. Not only is it not so bright financial (I’m admittedly a sucker for socializing over dinner and drinks), but it leaves me feeling lethargic and unhealthy. Even when I make relatively healthy food choices at restaurants, it’s not the same as a good homecooked, well-balanced meal.
No more. (Well, at least not for awhile….unless I get a socializing dinner offer). Tonight’s recipe of choice was tilapia with mango salsa. Mango salsa is something I’ve been intrigued by lately, and I almost ordered a dish with it during one of my many restaurant visits last week. I don’t know why I waited so long to try it because I’m crazy about it (granted I love mangos).
Naturally I made a few modifications. For starters, I didn’t grill the fish, although that wasn’t such a huge deal. In some ways I think I butchered the mango salsa recipe. I switched out red peppers (they’re like onions to me and I’m hoping it’s an acquired taste I can grow to like) for tomatoes, shallots replaced red onion, and I didn’t put in a jalapeno pepper, although I might next time to give it a more salsa-y kick.
So perhaps I didn’t really have mango salsa as much as I had a mango-based garnish. Either way it was fabulous! And paired with red pepper potatoes (my dad’s recipe but he makes his on the grill, which makes it even better) it was the perfect way to get back into cooking.
There’s no telling what else I’ll start putting this mango “salsa” on!
