Lasagna always seems like a staple dish that everyone knows how to make. I may have made a traditional lasagna once or twice (probably with the help of my mom or sister), but naturally I also like to think outside the box. I’ve attempted buffalo chicken lasagna (it’s just “eh”), vegetable lasagna and Thursday night it was creamy spinach lasagna.
Out of the three non-traditional lasagna recipes, this was the winner. It didn’t seem as heavy as a traditional lasagna and the taste was simple, which I really liked. It would also go really well with chicken and mushrooms, so there’s a few modifications I’d likely make next time.
Another perk? It actually makes for great leftovers. I tend to be really picky about leftovers, so I’m glad I found success in that department with this recipe.
