Technically the starting point for my weekly goals in June kicks off today (with 30 days this month I figured it was easier than having it start Friday and end on a Thursday), but I apparently wasted no time in adding a bit more excitement to my life this weekend.
Among other things (Art in the Park gave me a fabulous idea for my next craft project!), one of the adventures of Saturday was not only hitting up the farmer’s market, but then a challenge of making a meal out of the ingredients purchased there. Most Saturday mornings I get to the gym just as the farmer’s market is closing down, and I always kick myself for not going. It’s such a great atmosphere, and who doesn’t love all the fresh fruits and veggies (once you get past the slightly higher cost)?
The cooking mission was actually more of a success than I initially thought it would be. In fact, the only thing not from the farmer’s market was the chicken, and only because it wasn’t at the market. Everything else – the greens, blueberries (seriously to die for and I’m wishing I bought more!), cucumber, tomato, zucchini, garlic & herb bread and goat cheese – came straight from the farmer’s market just hours earlier. Not only is it colorful (which is one of my goals with any meal) but it was simple and delightful.
This meal is by no means new or unique, but it felt a bit rewarding to know that I’m able to head into the kitchen and whip up something healthy from scratch with no recipe (although I’m always going to be on the quest for new recipes). I also have to say that while I’m still on my broccoli kick, zucchini becomes my new go-to side dish. Why have I not cooked with it more??
