Last year when I worked in the student center, I was obsessed with an orzo salad. For the life of me, though, I can’t even remember what was in it (except for orzo, of course). This lemon orzo salad didn’t really come close, but at least it was healthy and turned into an easy dish for lunch at work.
I will say I’m thankful I was shopping for the pasta salad ingredients when I was also getting ingredients for the pasta bake I made the other night. Otherwise I doubt I would have known to look in the pasta section for orzo (I thought it was more like rice, but I was wrong…).
Like usual, I threw in some sautéed mushrooms just for kicks and also topped it with feta cheese. The salad still felt like it was missing something, though, so if I attempt it again I’ll likely throw in some chick peas or broccoli or something. Until then, my search continues for the orzo salad I loved so much.
