Friday night flare

I decided to mix up my Friday evening by trying my hand in the kitchen again with a friend. After emailing more than a dozen links back and forth, we settled on a lime chicken recipe and paired it with spanish rice. We also decided to try a southern dish — fried pickles (which thankfully aren’t really fried and turned out to be better than I expected).

The chicken wasn’t out of this world, but it definitely gave a new spin with my standard chicken. And the Spanish rice? Yum! It’s SO much better than any processed/box Spanish rice you would make – this coming from a girl who doesn’t really like onions or peppers either. We probably could have incorporated more vegetables, but I did manage to get in a pretty good workout before dinner. That counts for something, right?

Well, it probably did until we topped off our evening with gingerbread and homemade vanilla frosting (which naturally wouldn’t be complete without coffee).

All in all, it was another successful cooking venture. What was even better is that dinner took less than an hour to make, which is probably a record for the two of us. Hopefully my cooking hiatus is finally over.
